Zucchini Salad
Makes 4 Servings: Counts towards 1 cup Vegetables, ½ tablespoon Oil
INGREDIENTS
4 cups Zucchini, thinly sliced
1 Lemon, zested and juiced
2 Cloves of Garlic, crushed and halved
2 tablespoons Olive Oil
Sea Salt, to taste
½ teaspoon Ground Pepper
3 tablespoons Fresh Basil, chopped
DIRECTIONS

In a mixing bowl, toss the zucchini, garlic, olive oil, lemon juice, salt and pepper.

Place in the refrigerator to marinate for 3 to 4 hours.

When ready to serve, add in the lemon zest and basil.
