with Fresh Tomato Sauce

Zucchini Noodles with Fresh Tomato Sauce

Makes 5 Servings: Counts towards ½ cup Vegetables, ½ tablespoon Oil

 

 

INGREDIENTS

 1 cup Tomato, grated
 ½ cup White Onion, chopped
 1 Stalk of Celery, chopped
 2 Cloves of Garlic, minced
 2½ tablespoons Olive Oil
 1 tablespoon Basil, chopped
 1 tablespoon Mint, chopped
 1 teaspoon Sea Salt
 ¼ teaspoon Pepper
 1 teaspoon Red Pepper Flakes
 1 cup Zucchini, spiralized

 

DIRECTIONS

In a sauce pan, heat the olive oil over medium heat and cook the garlic until fragrant; add in the celery, onion, tomato and fresh herbs. Cook for 5 minutes and transfer to a blender or food processor.

Add the seasonings to the food processor and blend for 30 seconds until smooth; set aside.

In a skillet, lightly sauté the zucchini noodles over medium heat until warm and tender. Remove from heat and serve. Pour the sauce over the top of the noodles and use turkey meatballs, if desired.
