Zucchini Fritters

Preheat oven to 300ºF

Using a cheese grater grate the zucchini, then using a towel or paper towels squeeze as much excess water out as possible.

In a medium bowl combine all the ingredients except the oil.

Heat the oil in a pan over medium high heat, then using a spoon place dollops of the mixture into the hot pan and cook for about 2 minutes per side, making sure not to burn the fritters.
