Heat a skillet over medium high heat and add the grapeseed oil.
Add the green onions and mushrooms to the pan and cook for 1-2 minutes then add garlic, cook for another 2 minutes, then add the broccoli and cook for another minute.
Add the ginger, coconut aminos, sesame oil, and zucchini to the pan, coat the zucchini in the sauce. Remove and set aside half for lunch tomorrow. Set aside the remaining zoodles and cover to keep warm for dinner.
In the same pan add the ground seitan and cook until heated through. Add to the dinner zucchini noodles and enjoy.
