In a small bowl, whisk together tamarind, soy sauce, vinegar, stevia, chili powder, peanut butter, and curry paste.
Heat olive oil in a large saucepan over medium heat. Cook the garlic for 30 seconds, or until fragrant.
Add in the zucchini noodles and stir fry for about 2-3 minutes. Then add in the eggs and cook until scrambled.
Stir in the shrimp and sauce from the small bowl and cook until pink, about 3-4 minutes.
Remove from heat and stir in bean sprouts and green onion.
Serve with lime for garnish!
