Zesty Lemon Chicken

Zesty Lemon Chicken

Makes 3 Servings: Counts towards 1 Serving Meat, 1 tablespoon Oil

 

INGREDIENTS

 3 Cloves of Garlic, peeled
 1 Lemon, zested and juiced
 3 tablespoons Olive Oil
 1 tablespoon Jalapeño, chopped
 1 tablespoon Dried Oregano
 ½ teaspoon Sea Salt
 ½ teaspoon Black Pepper
 3 Personal Servings Chicken Breasts

 

DIRECTIONS

Puree the garlic, lemon zest, lemon juice and olive oil in a blender or food processor. Add in the jalapeño, oregano, salt, and pepper and pulse to combine. Transfer to a Ziploc bag and add in the chicken breasts; let marinate for 4 to 6 hours in the refrigerator.

Heat a grill pan on medium high heat, cooking the chicken for 5 to 6 minutes on each side until done and the internal temperature reaches 165°F.
