Yellow Curry Vegetables

INGREDIENTS

 

 1 tablespoon Yellow Curry Powder
 1 cup Unsweetened Coconut Milk
 2 cups Cremini Mushrooms, halved
 1 Green Bell Pepper, cut into slices
 1 Red Bell Pepper, cut into slices
 2 tablespoons Garlic, minced
 ½ teaspoon Sea Salt
 ¼ teaspoon Pepper
 1 tablespoon Olive Oil

 

DIRECTIONS

In a medium bowl combine yellow curry powder and coconut milk. Whisk until the coconut milk becomes yellow.

In a large saucepan heat olive oil over medium heat. Add in mushrooms and bell peppers and cook for about 3 minutes until the vegetables soften. Season with salt and pepper.

Pour in the curry coconut milk mixture and bring to a bowl.

Reduce heat and simmer for about 10 minutes until the flavor incorporates into the vegetables.
