Warm Ginger Lime Dressing Over Crisp Coleslaw
Makes 2 Servings: Each serving counts towards 2 cups Vegetables (¾ cup restricted vegetables), 1 tablespoon Oil

Heat a medium skillet over medium high heat and add 1 tablespoon of oil. Add in the onion and cook until just translucent; add in the ground ginger and sea salt.
While the onion is cooking combine the rice vinegar, lime juice, stevia, and remaining olive oil in a bowl. Add to the onions and whisk to combine.
In a separate large bowl, combine both cabbages and the green onions then pour the dressing over the top; toss to coat.
