Veggie Chili Stuffed Mushrooms
Makes 1 serving: Counts toward 1 30/10 Packet, 2 cups of vegetables , ¼ cup restricted vegetables, 1 tablespoon oil

Preheat the oven to 375ºF
Heat a saucepan over medium heat and add oil.
Add in the onions and green bell peppers and sauté until tender. Add in the garlic and spices and cook for another minute or until fragrant.
Reduce the heat to low and pour in the water and then the 30/10 Veggie Chili. Bring back up to a simmer and allow it to cook until the sauce is thick. Remove it from the heat.
De-stem the mushrooms and place them gill side up on a foil-lined tray. Gently spoon a small amount of Chili into the mushroom and place back on the tray. Bake the stuffed mushrooms for 10-15 minutes or until they have reached the desired doneness.
