Vegetable Stuffed Jalapenos

Pre-heat your oven to 425˚F
Slice jalapenos length-wise and de-vain and de-seed.
Heat a pan over medium high heat and add oil, mushrooms, bell pepper, onion, garlic, oregano, thyme and salt. Stir periodically for 7-10 minutes or until mushrooms are cooked down.
Add the feta and set the filling aside to cool.
Take the de-veined and seeded jalapenos and fill them with the cooled mushroom mixture.
Place the filled Jalapenos on a sheet tray or cookie sheet and place in the 425˚F oven for 15 minutes.
