Turkey Breast Roulade with Spinach and Feta

Preheat the oven to 375°F
Heat a pan over medium high heat.
Use a meat mallet to pound the turkey breast until it is ½ - 1 inch thick, season with sea salt and black pepper and set aside.
Pour the oil into the pan and add the onions, stir and sauté for 2 minutes, stir again and add the garlic, sauté until the onions are translucent.
Add the oregano and thyme to the pan then stir. Add the spinach and stir to wilt.
Turn off the burner and add the reduced fat feta cheese, stir to combine.
Carefully spoon the spinach mix onto the turkey breast and spread it out. Gently roll the turkey breast up, placing the spinach in the center. Tie with butchers string or kitchen twine. Place on a foil lined baking sheet and place in the oven for 30 minutes or until the internal temperature has reached 165ºF.
