Tuna Zoodle Casserole

Preheat the oven to 350°F.
Spiralize the zucchini and set aside.
Heat a large skillet on medium heat and add the coconut oil. Once melted, add the mushrooms and onions and cook until the onions are translucent.
Pour in the almond milk and season with salt, pepper and parsley. Add the tuna and stir.
Mix the zucchini noodles with the onion and mushroom sauce and place in a 9x13 in. casserole dish. Top with feta cheese.
Bake for 35 to 40 minutes until the casserole is hot throughout.
