Tuna Vegetable Salad
Makes 2 Servings: Counts towards 2 cups Vegetables, 1 tablespoon Oil, 1 Serving Dinner Meat
INGREDIENTS
2½ cups Celery, chopped
1 cup Plum Tomatoes, chopped
½ cup Onion, chopped
2 Cans of Tuna, drained
2 Lemons
1 tablespoon Olive Oil
Sea Salt, to taste
Black Pepper, to taste
1 Handful Parsley Leaves, coarsely chopped
DIRECTIONS

In a bowl, combine the celery, tomatoes, onions and parsley.

Flake the tuna and add to the salad. Squeeze the lemons over the salad and add the oil. Season with salt and pepper and toss.
