Tofurkey Italian Sausage

Another Delicious 30/10 Recipe

with Balsamic Mushrooms

RECIPE SUMMARY

 

Makes 2 servings: Each serving counts toward 1½ cups Vegetables, 1 serving Protein (with Tofurkey)

 

INGREDIENTS

 

 2 tablespoons Walden Farms Balsamic Vinaigrette
 ½ teaspoon Liquid Smoke
 1 teaspoon Tamari
 1 tablespoon Chives
 2 cloves Garlic, minced
 3 cups Mushrooms, sliced
 1 personal serving Tofurkey Italian Sausage, sliced

 

DIRECTIONS

Preheat the oven to 375ºF

In a small bowl combine all the ingredients except the mushrooms and tofurkey Italian sausage.

In a larger bowl place the mushrooms then pour the sauce over top and coat the mushrooms well. Spread the mushrooms evenly over a baking sheet. Place the sliced tofurkey Italian sausage in one section of the baking sheet. Bake for 15-20 minutes or until the mushrooms are soft.

Place half the mushrooms in a dish for lunch tomorrow and enjoy the rest for dinner.
