Preheat the oven to 375ºF
In a small bowl combine all the ingredients except the mushrooms and tofurkey Italian sausage.
In a larger bowl place the mushrooms then pour the sauce over top and coat the mushrooms well. Spread the mushrooms evenly over a baking sheet. Place the sliced tofurkey Italian sausage in one section of the baking sheet. Bake for 15-20 minutes or until the mushrooms are soft.
Place half the mushrooms in a dish for lunch tomorrow and enjoy the rest for dinner.
