with Cucumber Radish Relish

Tilapia with Cucumber Radish Relish

Makes 2 Servings: Counts towards 2 cups Vegetables, ½ tablespoon Oil, 1 Dinner Meat

 

INGREDIENTS

 2 Tilapia Filets
 Olive Oil Cooking Spray
 2½ cups Cucumber, with peel
 1½ cup Radishes, sliced
 ¼ teaspoon Tarragon, ground
 ½ tablespoon White Vinegar
 ¼ teaspoon Liquid Stevia
 1 Dash of Sea Salt

 

DIRECTIONS

Combine all ingredients apart from the fish in a small bowl, let sit.

Preheat the skillet on medium heat and spray with cooking spray. Cook tilapia for 2-3 minutes per side or until it flakes easily with a fork.

Transfer tilapia to a serving plate. Spoon the relish over each serving.
