Taco Soup

RECIPE SUMMARY

 

Makes 2 servings: Each serving counts towards 1 serving of protein, 1 tablespoon oil, 2 cups of vegetables (1 cup of restricted vegetables)

 

INGREDIENTS

 

 2 personal servings Chicken, diced
 2 tablespoons Avocado Oil
 2 cloves Garlic, minced
 ½ cup Onion, diced
 1 ½ cups Tomatoes, diced
 1 can Walden Farms Tomato Basil Sauce
 2 teaspoons Onion Powder
 1 cup Imagine Organic Free Range Chicken Broth
 2 tablespoons Lime Juice
 ¼ cup Cilantro, minced
 2 tablespoons Chili Powder
 1 tablespoon Cumin
 1 tablespoon Coriander
 2 cups Zucchini, diced
 Sea salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Heat a large stock pot over medium high heat.

In a small dish combine the chili powder, cumin, coriander, sea salt and black pepper.

As the pot is heating, season the chicken with a portion of the spice blend.

Add t. While he oil to the pot and sear the chicken on each side. Once all the chicken has been seared, add the onion and garlic to the pan and stir until it becomes aromatic.

Add in the tomatoes, the Walden farms tomato basil sauce and the onion powder and bring the dish to a simmer. Add in the chicken broth, stir and simmer for 20 minutes.

Add the zucchini and lime juice and simmer for another 10 minutes or until the zucchini is just soft.

Serve and garnish with cilantro if desired.
