Sweet Pepper Poppers

Sweet Pepper Poppers

Makes 6 Servings: Counts towards 1 oz. of Meat, ½ cup Vegetables, 1 Dairy Option

 

INGREDIENTS

 6 oz. Isernio’s Chicken Sausage, cooked
 1 Clove of Garlic
 ¼ cup Scallions
 3 cups Sweet Peppers
 1 Egg
 1 teaspoon Black Pepper
 ¾ cup Feta Cheese

 

DIRECTIONS

Preheat the oven to 375°F.

Except for the peppers, mix all ingredients in a bowl. Transfer to a small Ziploc bag, seal and refrigerate.

Prepare the peppers by making a small slice lengthwise; long enough to fit a paring knife in to remove the seeds and ribs.

Remove the bag of stuffing from the refrigerator and snip off one corner of the baggie like you would for frosting. Insert the snipped end into the pepper and fill. Lay the peppers in a nonstick baking dish, cut side up.

Bake for about 20 to 25 minutes.
