Sweet Onion Salmon

Place the oven rack on the second shelf from the top; preheat the oven to 375°F.
Place salmon fillet in a foil boat.
In a small bowl combine minced shallot, garlic, dried parsley, and salt; set aside.
In another small bowl, mix the walnut oil with the sweet onion dressing, using a basting brush or spoon and evenly spread on salmon fillet.
Evenly sprinkle the minced shallot and garlic over the top of the salmon fillet; add the black pepper as a crust.
Place the fillet in the oven and bake for 25 to 30 minutes, or until internal temperature has reached 133°F.
