“Sushi” Bites

with Crab and Cucumber

RECIPE SUMMARY

 

Makes 1 serving: Each Serving counts towards 1 serving of Protein, 1 cup of vegetables and 1 tablespoon of oil

 

INGREDIENTS

 

 1 personal Serving pre-cooked Crab Meat
 1 cup Cucumber, sliced into rounds
 4 teaspoons Rice Vinegar, divided
 ½ teaspoon Lime Juice
 1 teaspoon fresh Ginger, minced
 ¼ teaspoon Sesame oil
 ½ teaspoon Sambal Chili Paste (optional)
 3 tablespoons fresh Chives, sliced
 1 Egg Yolk
 ½ teaspoon Yellow Mustard
 ¾ cup Avocado Oil
 Sea Salt to Taste

 

DIRECTIONS

Make a mayonnaise by combining 2 ½ teaspoons vinegar, egg yolk, and yellow mustard, in a food processor and blending until it is a pale yellow color and lightly frothy. While blending slowly add in the oil to form a thick emulsion, this will create your mayonnaise.

In a medium bowl shred the crab meat and combine with n1 tablespoon of mayonnaise, rice vinegar, ginger, sesame oil and sambal (optional).

Lay the cucumber circles out and place a dollop of crab mix on each. Sprinkle with the fresh chives and enjoy.
