with Crab and Cucumber

Make a mayonnaise by combining 2 ½ teaspoons vinegar, egg yolk, and yellow mustard, in a food processor and blending until it is a pale yellow color and lightly frothy. While blending slowly add in the oil to form a thick emulsion, this will create your mayonnaise.
In a medium bowl shred the crab meat and combine with n1 tablespoon of mayonnaise, rice vinegar, ginger, sesame oil and sambal (optional).
Lay the cucumber circles out and place a dollop of crab mix on each. Sprinkle with the fresh chives and enjoy.
