Strawberry Rhubarb Waffle

In a small pot over medium low heat, combine rhubarb and strawberry syrup. Cook until rhubarb is soft, about 5 minutes. Stir in the packet of stevia and remove from heat.
Plug in and heat up a waffle iron to medium high heat.
In a small mixing bowl, whisk together the pancake packet, water, cinnamon, olive oil, and the egg. If the batter is too thick, add in a little more water until desired consistency is reached.
Grease the waffle iron and pour the batter onto the iron and close it, cooking for 2 to 3 minutes. Check on the waffle and continue checking every minute until desired doneness.
When done, remove from the iron and drizzle with strawberry rhubarb sauce.
