Steak Bites with Chimichurri Sauce
Makes 8 servings: Counts towards 2 Oz Meat, 1 tablespoon Oil

Slice steak into ½”-1” cubes and place in either a Ziploc or a shallow bowl.
On top of the cubed steak add all of the steak marinade ingredients, make sure each cube gets coated by the marinade and place it in the fridge to marinate for 8-14 hours.
In a food processor pulse all the chimichurri ingredients until the cilantro is finely broken up. Place in the fridge until ready to use.
Remove the steak from the fridge and bring a large pan up to medium high heat. Add in 2 tablespoons of Avocado Oil. Gently place the marinated beef cubes in the oil being careful not to overcrowd the pan. Flip the cubes over as soon as they sear and remove them from the pan within 3 minutes.
Top the cooked beef cubes with chimichurri and serve.
