Spinach and Broccoli Salad

Spinach and Broccoli Salad

Makes 2 Servings: Counts towards 2 cups Vegetables, 2 tablespoons Oil

 

INGREDIENTS

 4 cups Baby Spinach, washed
 2½ cups Broccoli Florets, steamed
 1 cup Red Bell Pepper, seeded and sliced
 ½ cup Red Onion, sliced
 4 tablespoons Olive Oil
 2 tablespoons Vinegar
 ½ teaspoon Mustard
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

In a bowl, whisk together the vinegar, mustard, salt, pepper and olive oil until emulsified.

Place the spinach in a separate, medium-sized bowl and drizzle with half of the vinaigrette; toss gently. Add the broccoli, bell pepper, and onion slices. Drizzle with the remaining vinaigrette and toss again. Finish with a few twists of black pepper and serve.
