Spicy Tandır-Style Chicken

Pre-heat oven to 375F
Quarter the tomatoes and roast in the oven for 15 minutes.
Remove the tomatoes from the oven and puree in a food processor with the garlic, sea salt, olive oil, red pepper flakes, cayenne or hot paprika, cumin, oregano and thyme.
Smother the cubed chicken with marinade and let it sit in the refrigerator for 4 to 24 hours.
30 minutes before cooking, pull the chicken from the refrigerator and cook in a pan over medium high heat until the internal temperature reaches 165F.
Serve with cauliflower rice and greens; for extra flavor, remove the chicken from the pan and cook the cauliflower rice in the pan drippings.
