Spicy Kale Salad
Makes 2 Servings: Counts towards 2 cups Vegetables, 1 tablespoon Oil
INGREDIENTS
4 cups Raw Kale
2 tablespoons Extra Virgin Olive Oil
Sea Salt, to taste
½ of Lemon
Red Pepper Flakes
DIRECTIONS

Clean and rinse the kale in cold water, pat dry and coarsely chop into bite-size pieces.

Place kale in a bowl with olive oil and toss to coat. Sprinkle with sea salt.

Juice the lemon over kale and sprinkle with red pepper flakes, tossing again.

Let sit for 10 minutes before serving to allow the olive oil, lemon and salt to mingle.
