In a bowl, whisk together the garlic, turmeric, coriander and egg to make a marinade. Add the pork and mix until well coated. Let marinate for at least 2 hours.
Heat the olive oil in a skillet over medium high heat; brown the pork and set aside.
In the same pan, add the onion, ginger, cumin and chili powder to the pan and cook for 2 to 3 minutes. Add the remaining vegetables to the skillet and cook until soft, about 5 minutes. Add the pork back into the pan and cook for another 5 to 10 minutes, or until meat is cooked through.
