Spiced Cauliflower Rice – Mujadara

RECIPE SUMMARY

 

Makes 2 servings: Each serving counts toward 2 cups of Vegetables (½ cup of restricted Vegetables), 1 tablespoon Oil

 

INGREDIENTS

 

 2 tablespoons Grapeseed Oil
 1 cup Onion, diced
 3 cups Cauliflower Rice
 ½ teaspoon Cinnamon
 2 teaspoons Cumin
 ½ teaspoon Allspice
 ½ teaspoon Cloves
 2 cloves Garlic, minced
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Heat a large pan over medium high heat.

Add the oil and onion to the pan and sauté until the onion is translucent (about 2-3 minutes).

Add the cauliflower rice to the pan along with the spices; stir regularly until the cauliflower is cooked though (about 5-7 minutes) then serve.
