Preheat oven to 375°F.
Chop the root off the garlic; grease a baking pan with olive oil and place with the garlic open side down; bake for 30 minutes.
Combine the cauliflower florets and cubed celeriac root with 2 Ounces of water in a microwave safe dish for about 5 minutes, until the cauliflower is tender.
Combine the roasted garlic, cauliflower and celeriac root in a food processor and pulse until smooth; season with salt and pepper, to taste.
