Slow Cooker Pork Green Chili

Slow Cooker Pork Green Chili   

Makes 4 servings: Each serving counts towards 2 cups of vegetables (½ cup restricted vegetables), 8oz protein, ½ tablespoon Oil  

 

INGREDIENTS

 2 lbs Tomatillos
 2 cups Green Chilies, fresh or canned (about 2 7oz cans)
 1 cup Onion, rough chop
 1 cup Tomatoes
 4 cloves Garlic, mince
 2 lbs Pork Shoulder, cut into quarters
 2 tablespoons Avocado Oil
 1 cup Imagine Organic Free Range Chicken Broth
 2 teaspoons Cumin
 2 teaspoons Chili Powder
 2 teaspoons Sea Salt
 ½ cup Cilantro, minced
 Additional Sea Salt and Pepper to taste

 

DIRECTIONS

Char the tomatillos, green chilies (if fresh), onion, tomatoes and garlic on a grill or under the broiler for 7 minutes, or until lightly charred.

Heat a pan over medium high heat, season the pork with sea salt and pepper, add the oil to the pan and sear the pork on each side, 3 minutes per side.

Remove the seared pork from the pan and place it in the bottom of the crock pot, roughly chop the charred vegetables (removing the green chili seeds if needed) and add them to the pork. Pour in the chicken broth and season with the cumin, chili powder and 2 teaspoons of sea salt.

Turn the crockpot to high and cook for 6-10 hours or until the pork shreds easily.
