Shrimp Zoodle Scampi

INGREDIENTS

 1 Personal Serving Shrimp
 1 ½ cups Zucchini, spiralized
 ¼ cup Tomatoes, diced
 2 tablespoons Shallot, roughly chopped
 2 tablespoons Green Onion, sliced
 2 tablespoons Minced Garlic
 1 ½ tablespoons Olive Oil
 1 to 2 tablespoons Lemon Zest
 1/3 cup Almond Milk, plain unsweetened
 1 ½ teaspoons Garlic Pepper
 1 teaspoon Granulated Onion
 1 teaspoon Salt

 

DIRECTIONS

Season the shrimp with the garlic pepper and granulated onion; set aside.

In a bowl, combine the tomatoes, green onions, and ½ tablespoon of the minced garlic and set aside.

Heat the olive oil in a skillet over high heat. Reduce heat to medium and add the seasoned shrimp, watching the shrimp closely until they turn pink. Remove the shrimp from the pan and set aside.

In the same pan used for the shrimp, add the remainder of the garlic and shallot; sauté for 30-45 seconds and add in the almond milk; bring to light simmer and add zoodles. Cook for 1-2 minutes.

Add shrimp, tomato and green onion fixings, and lemon zest. Mix together and add salt.
