Shrimp Fried “Rice”

Shrimp Fried “Rice”

Makes 2 servings: Counts towards 6oz Protein, 2 cups vegetables , ¼ +2 tablespoons restricted Vegetables, 1 tablespoon Oil

 

INGREDIENTS

 1 tablespoon Avocado Oil
 2 eggs
 1 lb Shrimp, deveined and deshelled
 ¾ cup Carrots, sliced thin
 1 clove Garlic, minced
 1 tablespoon fresh grated Ginger
 3 cups Cauliflower Rice
 2 cups Spinach
 2 tablespoons Tamari
 1 tablespoon Sesame Oil
 ¼ cup Green Onions
 Sea Salt to Taste

 

DIRECTIONS

Heat a medium pan over high heat add in half the avocado oil then scramble the eggs, remove the eggs and set them aside. Add in the shrimp and cook until pink, flip as needed (about 1-3 minutes).

Remove the cooked shrimp from the pan and set aside. In the same pan add the carrots and sauté until slightly tender (about 5 minutes). Add in the garlic and ginger and cook until fragrant.

Add the cauliflower, spinach and cooked shrimp to the pan and sauté until the spinach is wilted. Pour in the tamari and sesame oil then stir to combine.

Remove the pan from the heat and toss in the green onions give the dish one final stir and serve.
