Shrimp Ceviche

Shrimp Ceviche

Makes 1 Serving: Counts towards 1 Serving Meat, ¾ cup Vegetables

 

INGREDIENTS

 1 Personal Serving Shrimp, peeled and deveined
 ½ Lime, juiced
 1 Jalapeño or other Hot Chili Pepper (optional)
 ¼ cup Tomato, diced
 ½ cup Cucumber
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Bring a large pot of water to a boil; blanche the shrimp for about 1 minute and then shock in ice cold water to stop the shrimp from cooking.

Once the shrimp have cooled, remove from the ice water and dice into ½ inch pieces; place diced shrimp into a bowl.

Squeeze the half a lime over the shrimp and then add the jalapeño, tomato and cucumber; give the bowl a good stir.

Season with salt and pepper, to taste and set the bowl in the refrigerator for 1 hour.

Serve cold by itself or over leafy greens.
