Sautéed Ginger Bok Choy
Makes 2 Servings: Counts towards 2 cups Vegetables, 1 tablespoon Oil
INGREDIENTS
4 cups Bok Choy
2 tablespoons Olive Oil
2 Cloves of Garlic, minced
1 teaspoon Fresh Ginger, minced
1 tablespoon soy sauce (Kikkoman’s blue label)
Sea Salt, to taste
Black Pepper, to taste
DIRECTIONS

Over medium heat, heat the vegetable oil in a large skillet; add in the garlic and ginger and cook for 1 minute.

Meanwhile, cut the bok choy 1-inch pieces.

Add the bok choy to the pan and drizzle in the soy sauce; cook for 3 minutes or until the greens are wilted and the stalks are tender.

Season with salt and pepper, to taste.
