Sausage & Asparagus Frittata

RECIPE SUMMARY

 

Sausage & Asparagus Frittata

Makes 6 Servings: Counts towards ½ teaspoon Oil, 3½ oz. Meat, and 1 tablespoon Dairy Option, 1 Egg

 

INGREDIENTS

 1 tablespoon Avocado Oil
 1 cup Asparagus Spears, chopped (discarding the tough end)
 2 tablespoons Shallot, chopped
 1 16 oz. Package Isernio’s Chicken Sausage
 6 Eggs
 ½ cup Almond Milk
 1/3 cup Reduced Fat Feta Cheese
 3 Green Onions, chopped
 1/3 teaspoons Garlic Powder
 ¼ teaspoon Onion Powder
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Heat a 10” cast iron pan or skillet over medium heat and add 1 tablespoon avocado oil.

Add in the asparagus spears and shallot to the pan and cook for about 3-4 minutes until tender. Remove from the pan and set aside in a small bowl.

In the same hot pan, add the Isernio’s chicken sausage and cook until no longer pink.

Once the chicken is cooked all the way through, add the asparagus back in a combine.

In a large bowl whisk together the eggs, milk, feta cheese and all of the seasonings until thoroughly incorporated.

Pour egg mixture over the top and cook until just set but still runny on top, about 3-4 minutes.

While the egg mixture is cooking, preheat your broiler.

Sprinkle the green onions on top of the egg mixture and place under the broiler for about 6 to 8 minutes until the frittata is set.

Remove from the oven, cut into 6 slices, and serve!
