Salmon with Capers and Lemon
Make 2 servings: counts towards 1 serving of AP, 1 tablespoon of oil

Heat a pan over medium high heat and add in the oil.
Clean and trim the salmon if needed and season it with salt and pepper.
Place the salmon “skin” side down in the pan and cover with a lid. Cook for 15-20 minutes or until the internal temperature reaches 130ºF.
Remove the salmon from the pan and set it aside to rest. In the same pan place the remaining ingredients, stir and reduce by half.
Serve the sauce over top of the salmon.
