with Red Chile and Lime

Rustic Jicama with Red Chile and Lime

Makes 2 Servings: Counts towards 2 cups Vegetables

 

INGREDIENTS

 2 cups Jicama, peeled and cut
 1½ cups Cucumber, seeded and peeled
 ½ cup Radishes, thinly sliced
 3 tablespoons Lime Juice
 2 teaspoons Hot Chili Powder
 ½ teaspoon Sea Salt
 1/3 cup Cilantro, coarsely chopped

 

DIRECTIONS

Peel the jicama and cut in half. Placing the two halves face down, cut into ¼ inch slices. Peel and seed the cucumber, cutting in half lengthwise and in thin slices. Thinly slice the radishes.

Combine the cucumber, jicama and radish in a bowl with the lime juice, chili powder and salt; toss well and let stand for 30 minutes. Sprinkle with cilantro to garnish.
