Roasted Vegetables

Makes 1 Serving: Counts towards 1 cup Vegetables, 1 tablespoon Oil

 

INGREDIENTS

 ¼ cup Red Bell Pepper
 ¼ cup Green Bell Pepper
 ¼ cup Mushrooms, whole
 ¼ cup Zucchini
 1 tablespoon Olive Oil
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Preheat the oven to 425°F.

In a large bowl, toss the vegetables in the olive oil and season with salt and pepper.

Lay the vegetables out on a baking sheet and bake for 25 to 30 minutes.
