Roasted Turkey

RECIPE SUMMARY

 

Roasted Turkey

Makes 2 Servings: 1 Serving Meat, 1 tablespoon Oil

 

INGREDIENTS

Brine
 2 tablespoons of Sea Salt
 2 cups of cool water
 1 tablespoon of Black Peppercorns
 1 Thyme Sprig
 1 Bay Leaf
Turkey
 1 Rosemary Sprig
 1 Sage Leaf
 1 Thyme Sprig
 1 Marjoram Sprig (or ½ teaspoon dried)
 1 tablespoon Fresh Parsley
 ½ tablespoon Lemon Zest
 2 tablespoons Olive Oil
 2½ Tablespoons Minced Garlic
 2 teaspoons Sea Salt
 2 teaspoons Pepper
 1 teaspoon Paprika
 ½ teaspoon Nutmeg
 1 Turkey Breast

 

DIRECTIONS

Combine the Brine ingredients together and place the Turkey breast in a dish that can be covered. Pour the brine over the turkey and cover with a lid or plastic wrap. Place the turkey in the fridge for 2 to 3 days.

Rinse and remove the leaves from the herbs and combine them with the lemon zest, oil, garlic, seasonings in a blender. Blend until pulpy and set aside.

Preheat the oven to 380°F.

Remove the Turkey breast from the brine and rinse. Dab the turkey with a paper towel to dry itl, distribute the herb blend onto the meat of the turkey and place the turkey in the oven, cooking until the temperature reaches 365°F. Then remove the turkey from the oven and let it sit for 3 to 5 minutes. Enjoy!
