Makes 1 Serving: Counts towards 1 cup Vegetables, 1 tablespoon Oil

 

INGREDIENTS

 1 cup Okra
 1 teaspoon Garlic Powder
 1 tablespoon Olive Oil
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Preheat the oven to 425°F.

Evenly spread one layer of okra over a baking sheet and drizzle the okra with olive oil and season with salt, pepper and garlic.

Roast for 20 to 25 minutes, stirring halfway through.
