Roasted Cauliflower and Broccolini
Makes 2 Servings: Counts towards 2 cups Vegetables, 1 tablespoon Oil
INGREDIENTS
2 tablespoons Olive Oil
1½ teaspoons Sea Salt
1 teaspoon Pepper
1½ tablespoons Lemon Zest
5-6 Cloves of Garlic, roughly chopped
3½ cups Cauliflower Florets, washed
1 Bunch Broccolini, cleaned
DIRECTIONS

Preheat the oven to 375°F.

In a bowl, combine oil, salt, pepper and lemon zest; add in the washed cauliflower florets and broccolini and stir until coated.

Spread the vegetable mixture onto a cookie sheet and roast for 15 to 20 minutes.
