Roasted Carrot Fries

Heat oven to 425ºF and line two baking sheets with parchment paper then set aside.
Peel the carrots and cut them into fries (pieces that are about 3 in x ¼ in x ¼ in), place the fries in a large bowl.
Add the remaining ingredients to the bowl and toss to coat. Pour the carrots out onto the baking sheets and place them in the oven for 15-20 minutes.
