Roast Pork Loin with Sage
Makes 4 servings: Each Serving Counts towards 8 Oz of protein, ½ tablespoon of oil

. Pre-heat the oven to 400ºF.
Heat a large oven safe pan over high heat, add in the oil.
Dry and clean the pork of any excess fat then season with sea salt, black pepper and sage. Once the oil is hot place the pork loin in the pan, it may need to conform to the shape of the pan.
Brown the pork loin on each side (3-4 minutes per side). Once the pork loin is browned place the whole pan in the oven for 20 - 45 minutes or until the pork is 145ºF for medium rare up to 160ºF for well done.
Once the desired doneness is reached remove the pork from the pan and let it rest for 5 minutes before slicing into medallions.
*Cooking times will vary based on the thickness of the tenderloin, for quicker cook times slice the loin lengthwise before searing.)
