Radish Hash Browns
Makes 2 Servings: Counts towards 2 cups Vegetables, ½ tablespoon Oil
INGREDIENTS
3½ cups Radishes, diced
½ cup Onion
¼ teaspoon Thyme, ground
1 Tablespoon Olive Oil
Sea Salt, to taste
Black Pepper, to taste
Dash of Paprika
DIRECTIONS

Sauté onions in olive oil until soft, then add the radishes. Cook over medium heat until crisp on the outside and soft on the inside; about 8 minutes.

Add seasonings when almost done. Sprinkle with paprika just before serving.
