Portobello Mushroom Pizza

Portobello Mushroom Pizza

INGREDIENTS

 1 Personal Serving Chicken Breast
 1 Large Portobello Mushroom
 ¼ cup Red Onion, chopped
 1 cup Spinach, chopped
 2 tablespoons Reduced Fat Feta Cheese
 1-2 tablespoons Walden Farms Thick N’ Spicy BBQ Sauce
 Sea Salt, to taste
 Black Pepper, to taste
 ½ tablespoon Olive Oil

 

DIRECTIONS

Preheat the oven to 400°F.

Place the chicken breast on a baking sheet and season with salt and pepper; lightly drizzle with olive oil and roast in the oven for 10 to 15 minutes or until cooked through.

While the chicken cooks, remove the stem off of the mushroom and discard. Start the layering process with the BBQ sauce, spinach, red onion and feta; place mushroom on a baking sheet and bake for 5 to 10 minutes, or until mushroom becomes soft. Remove the chicken after putting in the mushroom.

Top the mushroom pizza with chicken and serve.
