Pork Loin Hash with Baked Eggs
Makes 2 Servings: Counts towards 1 Serving Meat, 2 Cups Vegetables (½ cup restricted vegetables), 2 tablespoons Oil, 1 Dairy Option, 2 Eggs

DIRECTIONS
Preheat the oven to 350°F.
In an oven-safe skillet over medium-high heat, warm the oil. Add the onion, turnips, green and red bell peppers.
Season with salt and pepper and cook for 10-12 minutes or until the vegetables are tender.
Add the garlic and cook until fragrant, about 1 minute.
Stir in the pork and then remove the pan from heat.
Crack the eggs on top of the hash and sprinkle the feta on top.
Transfer the skillet to the oven and cook for about 20 minutes or until the eggs are done to your preference.
Remove pan from the oven and sprinkle on a dash more of pepper.
Top with chopped fresh parsley and serve!
