Another Delicious 30/10 Recipe

RECIPE SUMMARY

Makes 1 Serving: Each serving counts towards 1 serving of protein (remember to subtract 1 oz from each portion of protein), 1 egg, 1 cup Vegetables

 

INGREDIENTS

 1 personal servings Boneless, skinless chicken breast
 ½ cup Onion
 1 tablespoon Tamari
 ½ tablespoon Walden Farms Pancake Syrup
 ¼ cup green onions
 1 Large Egg
 2 tablespoons Cilantro, chopped
 1¼ cups Cauliflower Rice, cooked
 1 cup Imagine Organic Vegetable Broth

 

DIRECTIONS

Remove any fat on the chicken breast and slice in half lengthwise, and slice in half lengthwise again.

Peel and slice the onion into thin, vertical wedges.

In a small skillet over medium heat, warm the veggie broth until it begins to simmer; add soy sauce and pancake syrup and stir.

Add chicken and onion to the pan and cook uncovered for 3 to 4 minutes or until the onions are soft and the chicken is cooked through.

While the chicken and onions cook, beat the eggs in a bowl; steam the cauliflower rice and place it in a bowl to keep warm.

Add the green onions to the skillet and pour the eggs onto the chicken and onions, cook until the eggs are cooked to your liking, about 1-3 minutes, garnish the top with cilantro.

Pour the egg mix over top of the cauliflower rice and serve.
