No-Bean Hummus

Preheat the oven to 425°F.
On a large baking sheet, toss the cauliflower with 1 tablespoon of the olive oil and toss to coat; season with salt and pepper. Place in the oven and bake for 20 to 25 minutes, until the cauliflower is very tender.
Let the cauliflower cool slightly then place in a food processor along with the peanut butter, lemon juice, jalapeño, and garlic; process until almost smooth. Taste test and adjust seasonings as needed; add a tablespoon of oil and process again until smooth, repeating until desired consistency is reached.
Transfer the hummus to a shallow serving bowl and sprinkle with the cayenne pepper and parsley; drizzle with olive oil, if desired.
