Nicoise Salad

Nicoise Salad

Makes 2 Servings: Counts towards 1 Serving Meat, 1 Egg, 1½ cup Vegetables

 

INGREDIENTS

Nicoise Salad
 2 4 oz. Cans of Tuna (or 8 oz. fresh cooked)
 ½ cup Cauliflower Florets
 ½ cup Green Beans
 ¼ cup Radishes, thinly sliced
 ¼ cup Tomatoes
 2 Eggs, hardboiled
 2 teaspoons Capers
 2 cups Mixed Greens
Dressing
 2 tablespoons Anchovy Paste (or 4 anchovies)
 2 tablespoons Parsley
 ¼ cup Shallot, minced
 2 Cloves of Garlic
 1 Lemon, juiced
 ¼ cup Basil
 1 teaspoon Yellow Mustard
 ¼ cup Olive Oil
 Black Pepper, to taste

 

DIRECTIONS

In a food processor, combine all the dressing ingredients and pulse until smooth; set aside.

Heat a pot of water over high heat and blanche the green beans for 30 seconds to 1 minute and then place in ice water to stop the cooking; place a steamer on top the hot pot of water and steam the cauliflower florets for 3 to 5 minutes.

Slice the cooled green beans into 1 to 2 inch pieces; quarter or dice the tomatoes and the hard boiled eggs.

In a large bowl, place the green beans, then the rest of the salad ingredients in little piles on top of the beans; top with the dressing and enjoy!
