Moroccan Meatballs

INGREDIENTS

Meatballs
 2 Personal Servings Isernio’s Italian Chicken Sausage, minus 1 oz.
 3 Cloves of Garlic, minced
 ½ cup Shallot, minced
 1 teaspoon Red Pepper Flakes
 1½ teaspoons Sea Salt
 1 teaspoon Pepper
 2 tablespoons Olive Oil
 ¾ cup Cilantro, chopped
 1 Large Egg
 3½ cups Zucchini, spiralized
 1 teaspoon Thyme
Moroccan Tomato Sauce
 ¼ cup Walden Farms Tomato Basil Sauce
 2 tablespoons Mina’s Harissa Spice
 1 teaspoon Sea salt
 1 Bay Leaf

 

DIRECTIONS

Mix all the meatball ingredients except Zucchini and Thyme together in a bowl; using your hands, form 1 inch meatballs; set aside.

Heat the olive oil in a frying pan over medium high heat; add the meatballs to the pan without overcrowding. Sea each meatball until golden brown; set aside.

In a medium saucepan over medium high heat, add all the tomato sauce ingredients and bring to a boil. Add the meatballs and simmer until they are cooked through, about 5 to 10 minutes.

Add the zucchini noodles to the sauce pan along with the thyme and cook until tender.
