Mediterranean Salad

INGREDIENTS

Dressing
 1 teaspoon Red Wine Vinegar
 1 tablespoon Olive Oil
 ¼ teaspoon Dried Oregano
 ½ teaspoon Fresh Mint, minced
 ¼ teaspoon Dried Thyme
 Sea Salt, to taste
 Black Pepper, to taste
Mediterranean Salad
 ¼ cup Cherry or Grape Tomatoes, quartered
 ¼ cup Yellow Bell Pepper, diced
 ½ cup Cucumber, diced
 ¼ cup Red Onion, sliced 1/8 in thick
 1 teaspoon Flat Leaf Parsley, minced
 3 tablespoon Reduced Fat Feta Cheese, crumbled
 2 cups Greens, cut and washed

 

DIRECTIONS

Combine the red wine vinegar, olive oil, oregano, thyme, mint, salt and pepper; set aside.

Combine the tomatoes, bell pepper, cucumber, parsley, and greens in a large bowl.

Dress mixed vegetables in the premade dressing and top with the feta cheese.
