Marinated Veggie Kabobs

Marinated Veggie Kabobs

Makes 4 Servings: Counts towards 2 cups Vegetables, 1 tablespoon Oil

 

INGREDIENTS

 2 cups Cremini Mushrooms
 1 cup Cherry Tomatoes
 1 cup Red Bell Pepper, cut into chunks
 1 Green Bell Pepper, cut into chunks
 1 cup Red Onion, cut into chunks
 1 cup Zucchini, sliced into thick rounds
 1 cup Yellow Zucchini, sliced into thick rounds
 ¼ cup Olive Oil
 3 Cloves of Garlic, pressed
 1 Lemon, juiced
 ½ teaspoon Dried Oregano
 ½ teaspoon Dried Basil
 Sea Salt, to taste
 Black Pepper, to taste

 

DIRECTIONS

Preheat the oven to 400°F.

In a small bowl, whisk together the olive oil, garlic, lemon juice, oregano, basil, salt and pepper.

Thread the mushrooms, tomatoes, bell peppers, onion, and zucchinis onto the skewers and place the skewers on a baking sheet.

Brush the skewers with the seasoned olive oil and let sit for 10 to 15 minutes.

Place the skewers in the oven and roast until tender, about 15 minutes.
