Thread the mushrooms, tomatoes, bell peppers, onion, and zucchinis onto the skewers and place the skewers on a baking sheet.
Brush the skewers with the seasoned olive oil and let sit for 10 to 15 minutes.
Place the skewers in the oven and roast until tender, about 15 minutes.
